30-Minute Shoyu Ramen

A shortcut broth built on stock, soy, mirin and a knob of ginger, with jammy eggs and quick-seared pork. Weeknight ramen that tastes like the real thing.

Ingredients

Tick them off as you go. Quantities are for 2 servings.

Method

  1. BrothSimmer the stock with soy, mirin, ginger and garlic for 15 minutes. Strain.

  2. EggsBoil the eggs 7 minutes, cool in ice water, peel and halve.

  3. PorkSear the pork slices in a hot pan 1 to 2 minutes per side until browned.

  4. NoodlesCook the noodles per the package, usually 2 to 3 minutes. Drain well.

  5. AssembleDivide noodles between two bowls, pour over hot broth, top with pork, egg, scallions and nori. Add chili oil.

Editor’s tip. Use fresh noodles from the refrigerator case if you can; they make a bigger difference than any broth trick.
