Ingredients

Method

  1. HeatHeat the oven to 425°F and line a 12-cup muffin tin with paper liners.

  2. MixWhisk the flour, baking powder, salt and ¾ cup sugar. In another bowl whisk the eggs, milk, oil and vanilla.

  3. CombinePour the wet into the dry and stir just until combined. Fold in the blueberries. The batter should be lumpy.

  4. BakeFill the cups to the top, sprinkle with sugar, and bake 5 minutes at 425°F. Reduce to 350°F and bake 15 to 18 minutes more.

Editor’s tip. The high-then-low oven gives the tall bakery dome. Do not skip the temperature drop.
