Vanilla pudding, ripe bananas and crushed vanilla wafers layered in glasses. Southern, simple and gone in a minute.

Ingredients

Method

  1. Cook the puddingWhisk the sugar, cornstarch, milk and yolks in a saucepan. Cook over medium heat, whisking constantly, until thick and bubbling, about 8 minutes.

  2. FinishOff the heat, stir in the butter and vanilla. Press plastic wrap onto the surface and chill 1 hour.

  3. LayerIn six glasses, layer wafers, banana slices and pudding. Repeat.

  4. TopFinish with whipped cream and crushed wafers. Chill 30 minutes more, or serve within a couple of hours.

Editor’s tip. Assemble the same day. The wafers soften as they sit, which is the point, but bananas brown after about 8 hours.
