Fluffy Buttermilk Pancakes
The diner pancake: tall, tender, slightly tangy. The batter rests 10 minutes and that is the whole secret.
Ingredients

Method
DryWhisk the flour, sugar, baking powder, baking soda and salt in a large bowl.
WetWhisk the buttermilk, eggs and melted butter in another bowl.
CombinePour wet into dry and stir until just combined; lumps are fine. Rest 10 minutes.
CookHeat a griddle over medium. Butter lightly, pour ¼-cup rounds, cook until bubbles pop on the surface (2 to 3 minutes), flip and cook 1 minute more.
ServeStack with butter, syrup and berries. Keep finished pancakes warm in a 200°F oven.
