Slow-Simmered Turkey Chili

Lean ground turkey, two kinds of beans and a deep chili-powder base. Makes a big pot, and tastes better tomorrow.

Ingredients

Method

  1. BrownHeat the oil in a large pot and brown the turkey over medium-high heat, breaking it up, for 6 to 8 minutes. Remove with a slotted spoon.

  2. SoftenCook the onion and pepper in the same pot 6 minutes. Add the garlic and spices for 1 minute.

  3. SimmerReturn the turkey and add the tomatoes, beans and broth. Simmer, partly covered, 30 to 40 minutes, stirring now and then.

  4. Season and serveTaste and add salt. Serve with cheddar, sour cream and scallions.

Editor’s tip. Bloom the spices in the oil for a minute before adding liquid. It deepens the flavor noticeably.
